    What is the caviar that is sold in grocery stores made of? Real caviar is very, very expensive.

    Cavier is just fish eggs treated in brine to separate them from the membrane of the roe. Any fish eggs may be losely called cavier when so treated. In grocery stores I've seen salmon roe and lumpfish cavier. The expensive stuff is cavier from the sturgeon. It is now farmed, also.


    The very small eggs of the sturgeon are prized. Personally having had good Russian cavier I prefer fish eggs larger and like salmon roe the best.

    It is fish roe. For example I like to eat Hackleback caviar. The roe of the Hackleback is quite dark and a medium size compared to other sturgeon caviar. Here you can find a lot of info about this and other types of caviar https://globalseafoods.com/products/...n-black-caviar
