    Beluga caviar comes from the Beluga Sturgeon mostly found in the Caspian Sea the largest salt water lake. It can also be found The Baltic sea basin an occasionally in the Adriatic sea.


    The Beluga Sturgeon takes up to twenty years to mature an are 900kg when harvested. The eggs are the largest commonly used Roe. The Roe varies in colour from dark grey to light grey, the lighter eggs coming from older fish an more expensive than common dark eggs.


    The most expensive of these are from the rare albino sturgeon 60 to 100 years most commonly found in the Southern End of the Caspian sea only there aren't many left so are listed as critically endangered due to over fishing an the demand of caviar an this is the force behind the prices being so high.

    The best accompaniments for caviar are whatever best helps you enjoy it, and that’s a matter of personal taste. As John Burgess wrote, a spoon might be all that is needed if you love the briny taste of caviar, all by itself.


    Many people put caviar on what Americans call crackers (the plainer the better, if you ask me), to serve as a vehicle for getting caviar to the mouth. Similarly, the Russian tradition is to eat tiny, thin pancakes (blini) with a small dollop of sour cream, topped by caviar.

    A spoon is best. If you must adulterate it, sour cream, minced egg yolk or whole egg, capers, or minced dill pickle are all fairly traditional.
